Farmed by Richard Baldwyn, Mickleton. Richard's free-range geese spend the summer roaming the orchards searching for windfalls giving them a rich, decadent flavour with crispy skin. Make sure you save the fat, and you'll have amazing roast potatoes for the rest of the year!

The Geese are dry plucked, finished by hand, and then hung for at least seven days.

Tip: Gently rub set honey into the skin before roasting and take the crispy skin to the next level.
