From Rebecca Wilson's very own Red Poll cattle. The Red Poll was created by crossing a Suffolk Dun, a milking breed, with the Norfolk Red, a beef breed. The breed has a distinct deep red colour, it’s ‘polled’, which means it naturally has no horns. They can be milked and also produce top-quality beef.

A rib steak is perfect if you prefer the flavour and presentation that comes with the bone-in cut, and don't mind the extra cooking time it may require. As one of the most flavoursome and tender cuts, it is due to the high proportion of fat running through the middle.
