Farmed by the Smee Family in Herefordshire, at Springfield Farm. The Smee family slowly hand-rears their cockerels for an additional seven weeks longer than their chickens, which gives a greater depth of flavour. The birds have dawn-to-dusk access to fresh pastures, fresh air and natural surroundings. Each cockerel is hand-plucked, prepared, and supplied with giblets.
